Method

Crisp the bacon. Fry the bacon until crisp on a non-stick pan. Let it cool slightly, then chop.

Build the bowl. Combine the bacon, eggs, avocado, onion and bell pepper in a bowl.

Season and serve. Season with salt and pepper to serve.

Chef's tips

  • Prep the night before. Hard boil the eggs ahead of time and keep them in the fridge, so assembly is literally two minutes in the morning.
